healthy cake batter milkshake


no, the title of this post isn't a typo, you really can make a healthy and delicious milkshake! coldstone's cake batter ice cream is my ultimate weakness, so once i spotted this recipe on the blog "chocolate covered katie" i had to share the recipe with you guys. get out your blenders because after you see this delicious treat you will already be raiding your pantries for the ingredients!




Cake Batter Milkshake
(100% raw and sugar-free)

* 1 frozen, large banana, as ripe as possible
* 1/2 tsp pure vanilla extract
* 2-6 tsp melted virgin coconut oil OR 1-2 T melted coconut butter
* 1/2 to 2/3 cup milk (I used 200g almond) (For an extremely rich, “ice cream”-like shake, try coconut milk. Also, use more or less, depending on desired thickness.)
* If, like me, you prefer smoothies in a bowl, reduce milk, or add a pinch of xantham and guar gums, like with the Mint-Chocolate Shake
* Optional: for a more cake-like flavor, you can either add 1T coconut butter, or macadamia or cashew butter, OR very scant 1/8 tsp butter extract. But I opted to leave these out of the recipe, as macadamia butter is hard to find, and butter extract isn’t exactly raw lol! (It is, however, vegan. I emailed Wilton.) Or maybe even use a little melted vegan butter?
* Optional: handfuls of sprinkles

Blend everything together in your Vita-Mix or blender. Add some sprinkles, pre-blending, and throw some more on top! (No, the sprinkles aren’t raw.)
